My super speedy summer couscous salad requires no cooking and can be ready in less than 15 minutes. It is my go-to lunch when I need something healthy, quick and delicious. It’s ideal for those moments when you have over-binged on Netflix, it’s about 10pm and you need something prepped for lunch the next day! Continue reading “Speedy Summer Couscous Salad”
I am kind of addicted to breakfast cereals right now…as you can probably tell from all my porridge recipes. Continue reading “Cashew, Pecan & Mulberry Granola”
OK so I am kind of shocked that it has taken me so long to post an Asian inspired recipe. Especially considering that I am half Malaysian and I make a lot of Asian food. Like a lot a lot. But you know what they say – better late than never!
Life can get pretty hectic, and so for me sometimes it is the small things that really make me appreciate the weekend. This weekend, it was having time to have a lazy breakfast in bed. I normally grab something on the go, but this Saturday I pootled around in the kitchen and made this amazing porridge, and then took it back to bed and snarfled it.
This recipe is fast becoming one of my absolute favourites. So simple to make and seriously tasty. I made this on Sunday and we have been enjoying this all week for lunch. Super handy as I didn’t have to worry about preparing lunches. I would recommend serving with a crisp green salad. Lentils are packed with protein so it makes a pretty substantial lunchtime meal. Another smoothie recipe! This little beauty is a great on-the-go breakfast! It is both filling and delicious. I use frozen berries in my smoothies as I think smoothies taste great chilled and it means I can keep a wide variety of berries on hand when I need them! Continue reading “Berryburst Smoothie Recipe”
This is a recipe that I developed for the Healthy Supplies Newsletter! I wrote a guest segment for this month and the topic was Millet! I really don’t think people make a big enough deal about Millet. It is an amazing little seed and is alkalising, gluten-free and super tasty! We have just got back from an amazing trip in Arezzo, Tuscany. We spent four days walking around the beautiful medieval streets, enjoying the warm weather and enjoying endless plates of delicious Tuscan food! Unsurprisingly, ever since I got back I have had crazy cravings for Italian food. So this afternoon, I whipped up a plate of bruschetta. The beautiful fresh flavour really took me back to Italy and I’m sure you are going to love it!
I recently had an insane craving for amazing potato gratin. The trouble is, traditional potato gratin is very calorific – all that cream and cheese and butter (nom). So I decided to try and make a healthier version. I was under no illusion that I could make it super healthy, but the version I came up with was tasty and healthier! Little changes can have a big impact!
