Miso Glazed Aubergine
Aubergines are one of my favourite vegetables. They are a great choice for vegetarians, as they soak up any flavour or spice that you add to them. I normally use them in my Italian-inspired Aubergine Parmigiana. But this time I wanted to try something different. When I was a meat-eater, I used to enjoy miso-glazed salmon, super healthy and full of flavour. It was one of my favourite dishes, and so naturally I wanted to find a vegetarian friendly version! Creamy Cheddar Polenta with BBQ Seitan Stew
OK so I think I have found the ultimate comfort food… Creamy, cheesy polenta. How have I not had this before? We are going away in a couple of weeks and so I am trying to use up stuff in my cupboards. I have had a bag of polenta at the back of my cupboard for a while, and I thought today would be a great day to make a savoury dish with it! I have always used it in cakes and so this was my first venture into savoury territory. It was a good venture!

Adventures in Poland!
So I have been a bit quiet on the old blog front recently – this is because I was gallivanting around in Poland, in a lovely town called Bydgoszcz. Some good friends of mine got married and so we headed over there for a fun-packed few days! After our shocking lack of summer here in the UK, I was really happy to arrive in Poland and find that it was gloriously sunny and warm!
