Cacao Nicecream with Fresh Berries

By a show of hands, who overindulged this Christmas?

Me.

So guilty of this. So. much. cheese… Also how do those tiny canapés pack in so many calories? How??

Anyway, if you are like me and you feel the need to nourish your body with some delicious goodness – then look no further! I made this nicecream bowl the day after boxing day. I had managed to consume two roast dinners and endless amounts of canapés over the course of the festive break, and my body felt like it had turned into a (veggie) sausage roll. So I made this delicious bowl of yum. It was chocolatey enough to trick my mind into thinking I was being indulgent – but actually packed with goodness.

Creamy Dill Canapés

It is official, Christmas is upon us! A glorious time of year – I absolutely adore the festive season! I love spending time with my nearest and dearest. I love making homemade gifts and cooking for a crowd. This year will be no different, and I am super excited that some of my family from Malaysia will be visiting!

Strawberry, Cardamom and Pistachio Panna Cotta

Panna cotta is something that since I turned vegetarian, has largely been off the menu. But no more! I discovered something quite magical when I was doing my monthly shop – Vege Gel! This amazing sachet of powder is a vegetarian-friendly setting agent that can be used in  both sweet and savoury recipes!

I had a carton of soya cream in my cupboard, along with some over-ripe strawberries and I knew what I had to do. It was panna cotta time…

Potato, Aubergine and Spinach Spanakopita

A few years ago, I visited a food fair in London. At this fair, I stumbled across this wonderful little Greek stand. It was packed with plates of delicious Greek food, including this amazing pie made from spinach, feta and filo pasty. It was called Spanakopita and I was entranced.

Pumpkin Pie Overnight Oats

So I had a dilemma.

One I imagine that most people experience around this time of year. I had half a can of pumpkin puree left over from my Pumpkin and Cinnamon Swirl Buns and I had no ideas what to do with it. I know, I know big problem, huh?. Anyway I hate wasting food, so I tried to come up with a tasty way to use it up. I thought maybe a smoothie, but it was too chilly to enjoy an icy smoothie. I thought cupcakes, but I had just demolished most of the buns and figured I should aim for something healthier. So I thought I would create a Pumpkin Pie Overnight Oats recipe!

Chocolate and Peanut Butter Fudge

There are a lot of occasions coming up where the temptation to eat something unhealthy will strike: Halloween, Bonfire Night, Christmas, Friday nights… Chocolate is something that I find super hard to resist. Luckily I discovered something magical – cacao powder. I have used it in lots of my recipes before – like my raw chocolates and my overnight chocolate porridge. It really is amazing, it has a fuller flavour than cocoa. It also contains lots of nutrients and is a good source of antioxidants. It isn’t heat-treated during the processing part of its production, so this means it retains all the goodness of the cacao beans! Eating chocolate AND getting healthy? Er – yes please!!!

Pumpkin & Cinnamon Swirl Buns

Autumn may be my favourite season. I love everything about it. I love the beautiful, crunchy red and orange leaves. The pumpkin carving, the pumpkin eating, the chai vanilla lattes and the chilly autumn evenings. I love the excuse to snuggle. Oooh who doesn’t love a good snuggle? Autumn is a very snuggly month. Snuggles with your significant other, or your pet, snuggles with your favourite warm jumper, or scarf. Or bed – yeah autumn makes me realise how much I love my bed. Beds always feel so much better in the cooler months!

Vegetable Spring Rolls

This is the first opportunity that I have had to catch up on my blogging recently! I am so sorry for being so quiet! I have had a pretty jam-packed, amazing, crazy month visiting my relatives in Asia. I will be sharing several travel related posts over the next few weeks! As you know, I love travelling – I love immersing myself in the culture of other countries. I also love getting new cooking inspiration! This trip I was lucky to visit not only Malaysia but also Thailand. This recipe is inspired by the delicious street food that we tried in Bangkok.
