Nourishing Noodle Soup

Before I became vegetarian, I used to cook a delicious chicken noodle soup. When I gave up meat, I didn’t want to lose out on this amazing soup. I figured that there were plenty of delicious ingredients that I could use to substitute the meaty flavour of chicken. So I set to work experimenting – and you know what, I actually prefer the veggie version of this soup! Seriously, you can taste the incredible network of flavours more without the chicken overpowering your palate. I think one of the key ingredients in this is the mushrooms. I love mushrooms, they are fantastic substitutions for meat. Especially the portobello mushrooms, they just have this incredible, savoury flavour that makes this dish come alive!

Everyone knows that I am a bit obsessed with millet. I really think that it is an under-used little grain! It is packed with vitamins and nutrients. It is also an alkalising food, meaning it really nourishes our body and can be digested really easily. Lemon and Ginger Shortbread

This shortbread is one of my favourite things to bake when I have guests coming round! It can be mixed up in under 15 minutes and baked in around 30 – 40 minutes. Gingerbread Loaf Cake

Gingerbread is normally synonymous with Christmas and winter, but I had a huge craving for it today and decided to make a gingerbread loaf cake! This delicious cake is lighter than traditional ginger bread, and goes perfectly with a cup of tea!

Aubergine Parmigiana

This is quite possibly one of my favourite recipes. Like my Butternut Squash and Kale Risotto, this recipe really showed me that I just don’t need to eat meat. It is SO easy to make and it tastes delicious. It really is just a matter of assembling, as opposed to laborious cooking.

Grain-Free Carrot and Courgette Cake with Cashew Frosting

One of the great things about being a vegetarian is that I always seem to have an abundance of fresh produce in my house! But sometimes I am overly ambitious and either buy too many vegetables, or just don’t get around to using everything in time. This weekend I had half a courgette that needed to be used up, residual from my courgette fritters. I have heard a lot of about courgette cakes. I have enjoyed beetroot brownies, I adore carrot cake, but had yet to try baking with courgette!

Raw Chocolate and Hazelnut Tart

Raw Chocolate and Hazelnut TorteOne of my aims in life is to create recipes that taste amazing and help you feel amazing! Believe me, this chocolate tart does exactly that. It is raw, dairy-free and oh-so delicious. The only sweetness comes from fresh dates and honey. The base tastes similar to ferrero rocher, whilst the filling tastes like chocolate pudding! In my earlier post, I talked about why cacao powder was so amazing – it works really well in this recipe as it provides the rich chocolatey flavour in both the filling and the crust.

Springtime Snack Inspiration

I love Spring. Honestly, I think it may be my favourite season! I love that the weather gets warmer and the dreary winter skies turn a brilliant blue. I also love the abundance of fresh fruit and berries that come with this time of year. I don’t know why, but I tend to crave cheese and stodgy food in winter. But in the spring I crave strawberries, grapes, blueberries, apples, melon and yoghurt. I thought I would post some snack inspiration today. I have recently discovered apple and almond butter – I am obsessed with this snack and can’t believe I never had it before!
