Making Banana Pancakes

Who doesn’t love a good pancake? I ruddy love pancakes. These fluffy little beds of deliciousness make the nicest brunch or dessert, or heck even breakfast! But they aren’t always the healthiest option.

Cacao Nicecream with Fresh Berries

By a show of hands, who overindulged this Christmas?

Me.

So guilty of this. So. much. cheese… Also how do those tiny canapés pack in so many calories? How??

Anyway, if you are like me and you feel the need to nourish your body with some delicious goodness – then look no further! I made this nicecream bowl the day after boxing day. I had managed to consume two roast dinners and endless amounts of canapés over the course of the festive break, and my body felt like it had turned into a (veggie) sausage roll. So I made this delicious bowl of yum. It was chocolatey enough to trick my mind into thinking I was being indulgent – but actually packed with goodness.

I use frozen berries in my smoothies as I think smoothies taste great chilled and it means I can keep a wide variety of berries on hand when I need them! Grain-Free Carrot and Courgette Cake with Cashew Frosting

One of the great things about being a vegetarian is that I always seem to have an abundance of fresh produce in my house! But sometimes I am overly ambitious and either buy too many vegetables, or just don’t get around to using everything in time. I have enjoyed beetroot brownies, I adore carrot cake, but had yet to try baking with courgette!

Springtime Snack Inspiration

I love Spring. Honestly, I think it may be my favourite season! I love that the weather gets warmer and the dreary winter skies turn a brilliant blue. I also love the abundance of fresh fruit and berries that come with this time of year. I don’t know why, but I tend to crave cheese and stodgy food in winter. But in the spring I crave strawberries, grapes, blueberries, apples, melon and yoghurt. I thought I would post some snack inspiration today. I have recently discovered apple and almond butter – I am obsessed with this snack and can’t believe I never had it before!

Grain-Free Banana Bread

DSC_0548

Banana bread is one of the best ways to use up over-ripe bananas. The riper the bananas, the sweeter the bread will be. This recipe is free from refined sugar, so sweet bananas really are essential! Normal banana bread uses wheat flour, but I wanted to try and create a grain-free version. I had a surplus of coconut flour and ground almonds left over, so this seemed a good place to start!
