So guilty of this. So. much. cheese… Also how do those tiny canapés pack in so many calories? How??
Anyway, if you are like me and you feel the need to nourish your body with some delicious goodness – then look no further! I made this nicecream bowl the day after boxing day. I had managed to consume two roast dinners and endless amounts of canapés over the course of the festive break, and my body felt like it had turned into a (veggie) sausage roll. So I made this delicious bowl of yum. It was chocolatey enough to trick my mind into thinking I was being indulgent – but actually packed with goodness.
Panna cotta is something that since I turned vegetarian, has largely been off the menu. But no more! I discovered something quite magical when I was doing my monthly shop – Vege Gel! This amazing sachet of powder is a vegetarian-friendly setting agent that can be used in both sweet and savoury recipes!
I had a carton of soya cream in my cupboard, along with some over-ripe strawberries and I knew what I had to do. It was panna cotta time…

This beautiful sunny weather has been dreamy! I am going to absolutely make the most of it, because lets face it – this is England. Who knows how long this is going to last! I am under no illusion that this recipe is super healthy. But it is healthier than its traditional sister tray bake – Millionaires’ Shortbread. How I hear you say? Well, first of all, this is made from raw cacao, which is sweetened only with honey! The health benefits of raw cacao are vast and in my opinion, it tastes better than normal chocolate! There is basically less sugar in this, and the ingredients used maintain most of their original nutrients – unlike the really processed stuff you get in shop. One of my aims in life is to create recipes that taste amazing and help you feel amazing! Believe me, this chocolate tart does exactly that. It is raw, dairy-free and oh-so delicious. The only sweetness comes from fresh dates and honey. The base tastes similar to ferrero rocher, whilst the filling tastes like chocolate pudding! In my earlier post, I talked about why cacao powder was so amazing – it works really well in this recipe as it provides the rich chocolatey flavour in both the filling and the crust.
This afternoon I had a hankering for something sweet. I don’t always make desserts, but today was definitely a dessert day! Unfortunately there was nothing I could shovel straight into my mouth to satisfy my sweet cravings, so I decided to cobble something together.
