Strawberry, Cardamom and Pistachio Panna Cotta

Panna cotta is something that since I turned vegetarian, has largely been off the menu. But no more! I discovered something quite magical when I was doing my monthly shop – Vege Gel! This amazing sachet of powder is a vegetarian-friendly setting agent that can be used in  both sweet and savoury recipes!

I had a carton of soya cream in my cupboard, along with some over-ripe strawberries and I knew what I had to do. It was panna cotta time…

Pumpkin Pie Overnight Oats

So I had a dilemma.

One I imagine that most people experience around this time of year. I had half a can of pumpkin puree left over from my Pumpkin and Cinnamon Swirl Buns and I had no ideas what to do with it. I know, I know big problem, huh?. Anyway I hate wasting food, so I tried to come up with a tasty way to use it up. I thought maybe a smoothie, but it was too chilly to enjoy an icy smoothie. I thought cupcakes, but I had just demolished most of the buns and figured I should aim for something healthier. So I thought I would create a Pumpkin Pie Overnight Oats recipe!

Chocolate and Peanut Butter Fudge

There are a lot of occasions coming up where the temptation to eat something unhealthy will strike: Halloween, Bonfire Night, Christmas, Friday nights… Chocolate is something that I find super hard to resist. Luckily I discovered something magical – cacao powder. I have used it in lots of my recipes before – like my raw chocolates and my overnight chocolate porridge. It really is amazing, it has a fuller flavour than cocoa. It also contains lots of nutrients and is a good source of antioxidants. It isn’t heat-treated during the processing part of its production, so this means it retains all the goodness of the cacao beans! Eating chocolate AND getting healthy? Er – yes please!!!
