Vegetable and Lentil Loaf

This recipe is fast becoming one of my absolute favourites. So simple to make and seriously tasty. I made this on Sunday and we have been enjoying this all week for lunch. Super handy as I didn’t have to worry about preparing lunches. I would recommend serving with a crisp green salad. Lentils are packed with protein so it makes a pretty substantial lunchtime meal. The beautiful fresh flavour really took me back to Italy and I’m sure you are going to love it!

So I decided to try and make a healthier version. I was under no illusion that I could make it super healthy, but the version I came up with was tasty and healthier! Little changes can have a big impact!
