This is the first opportunity that I have had to catch up on my blogging recently! I am so sorry for being so quiet! I have had a pretty jam-packed, amazing, crazy month visiting my relatives in Asia. I will be sharing several travel related posts over the next few weeks! As you know, I love travelling – I love immersing myself in the culture of other countries. I also love getting new cooking inspiration! This trip I was lucky to visit not only Malaysia but also Thailand. This recipe is inspired by the delicious street food that we tried in Bangkok.

Creamy Cheddar Polenta with BBQ Seitan Stew

OK so I think I have found the ultimate comfort food… Creamy, cheesy polenta. How have I not had this before? We are going away in a couple of weeks and so I am trying to use up stuff in my cupboards. I have had a bag of polenta at the back of my cupboard for a while, and I thought today would be a great day to make a savoury dish with it! I have always used it in cakes and so this was my first venture into savoury territory. It was a good venture!

Potato and Leek Gratin

I recently had an insane craving for amazing potato gratin. The trouble is, traditional potato gratin is very calorific – all that cream and cheese and butter (nom). So I decided to try and make a healthier version. I was under no illusion that I could make it super healthy, but the version I came up with was tasty and healthier! Little changes can have a big impact!
