There are a lot of occasions coming up where the temptation to eat something unhealthy will strike: Halloween, Bonfire Night, Christmas, Friday nights… Chocolate is something that I find super hard to resist. Luckily I discovered something magical – cacao powder. I have used it in lots of my recipes before – like my raw chocolates and my overnight chocolate porridge. It really is amazing, it has a fuller flavour than cocoa. It also contains lots of nutrients and is a good source of antioxidants. It isn’t heat-treated during the processing part of its production, so this means it retains all the goodness of the cacao beans! Eating chocolate AND getting healthy? Er – yes please!!!
This is the first opportunity that I have had to catch up on my blogging recently! I am so sorry for being so quiet! I have had a pretty jam-packed, amazing, crazy month visiting my relatives in Asia. I will be sharing several travel related posts over the next few weeks! As you know, I love travelling – I love immersing myself in the culture of other countries. I also love getting new cooking inspiration! This trip I was lucky to visit not only Malaysia but also Thailand. This recipe is inspired by the delicious street food that we tried in Bangkok.
So I have been a bit quiet on the old blog front recently – this is because I was gallivanting around in Poland, in a lovely town called Bydgoszcz. Some good friends of mine got married and so we headed over there for a fun-packed few days! After our shocking lack of summer here in the UK, I was really happy to arrive in Poland and find that it was gloriously sunny and warm!
So I am incredibly excited because last week I received an early birthday present – a stunning Candy Apple Artisan Kitchenaid. I’m seriously in awe of this beautiful mixer. Every year when the Great British Bakeoff is on, I basically drool with jealousy – so you can only imagine how bloody excited I was when I found one in my living room! This beautiful sunny weather has been dreamy! I am going to absolutely make the most of it, because lets face it – this is England. Who knows how long this is going to last! The thing is, in beautiful sunny weather I get massive cravings for iced desserts. Obviously gorging on ice cream is not going to make me feel good! This recipe is fast becoming one of my absolute favourites. So simple to make and seriously tasty. I made this on Sunday and we have been enjoying this all week for lunch. Super handy as I didn’t have to worry about preparing lunches. I would recommend serving with a crisp green salad. Lentils are packed with protein so it makes a pretty substantial lunchtime meal. I love Spring. Honestly, I think it may be my favourite season! I love that the weather gets warmer and the dreary winter skies turn a brilliant blue. I also love the abundance of fresh fruit and berries that come with this time of year. I don’t know why, but I tend to crave cheese and stodgy food in winter. But in the spring I crave strawberries, grapes, blueberries, apples, melon and yoghurt. I thought I would post some snack inspiration today. I have recently discovered apple and almond butter – I am obsessed with this snack and can’t believe I never had it before!
