Portobello mushrooms are actually one of my favourite things. Ever. They are so flavoursome and they make the perfect base for this recipe! I actually use three different mushrooms in this recipe. Some may call it overkill, I call it heaven. Before I became vegetarian I used to think of mushrooms as quite bland. I didn’t dislike them, but they weren’t my vegetable of choice. Now we always keep a massive punnet of mushrooms in our fridge at all times and our spice cupboard ALWAYS contains some form of dried mushrooms – normally porcini.
OK so I decided to try and entice Summer back to the Brighton shores by whipping up a traditional Berry Summer Pudding. Falafel are a Middle-Eastern snack made from chickpeas. They are normally fried and served in pitta bread, and man are they are delicious! They are absolutely perfect for this time of year, they taste great served with couscous or salad.
Ratatouille is a great way to get loads of delicious vegetables into your diet. It is also the perfect dish to put together if you are short on time. It’s basically a chop and bake deal, which allows you to get on with other things! Man, I love these kinds of recipes!
This beautiful sunny weather has been dreamy! I am going to absolutely make the most of it, because lets face it – this is England. Who knows how long this is going to last! I am under no illusion that this recipe is super healthy. But it is healthier than its traditional sister tray bake – Millionaires’ Shortbread. How I hear you say? Well, first of all, this is made from raw cacao, which is sweetened only with honey! The health benefits of raw cacao are vast and in my opinion, it tastes better than normal chocolate! There is basically less sugar in this, and the ingredients used maintain most of their original nutrients – unlike the really processed stuff you get in shop.
