Falafel are a Middle-Eastern snack made from chickpeas. They are normally fried and served in pitta bread, and man are they are delicious! They are absolutely perfect for this time of year, they taste great served with couscous or salad.
Ratatouille is a great way to get loads of delicious vegetables into your diet. It is also the perfect dish to put together if you are short on time. It’s basically a chop and bake deal, which allows you to get on with other things! Man, I love these kinds of recipes!

OK so I am kind of shocked that it has taken me so long to post an Asian inspired recipe. Especially considering that I am half Malaysian and I make a lot of Asian food. Like a lot a lot. But you know what they say – better late than never!
This recipe is fast becoming one of my absolute favourites. So simple to make and seriously tasty. I made this on Sunday and we have been enjoying this all week for lunch. Super handy as I didn’t have to worry about preparing lunches. I would recommend serving with a crisp green salad. Lentils are packed with protein so it makes a pretty substantial lunchtime meal. We have just got back from an amazing trip in Arezzo, Tuscany. We spent four days walking around the beautiful medieval streets, enjoying the warm weather and enjoying endless plates of delicious Tuscan food! Unsurprisingly, ever since I got back I have had crazy cravings for Italian food. So this afternoon, I whipped up a plate of bruschetta. The beautiful fresh flavour really took me back to Italy and I’m sure you are going to love it!
I recently had an insane craving for amazing potato gratin. The trouble is, traditional potato gratin is very calorific – all that cream and cheese and butter (nom). So I decided to try and make a healthier version. I was under no illusion that I could make it super healthy, but the version I came up with was tasty and healthier! Little changes can have a big impact!
